Flan 1-2-3 in the Pressure Cooker

Made with Nestlé La Lechera Sweetened Condensed Milk
The 1-2-3 flan is a classic Brazilian dessert because the ratio is easy to remember:
- 1 can condensed milk
- 2 cans milk
- 3 eggs
Ingredients
Flan
- 1 can (375 g) sweetened condensed milk
- 2 cans whole milk (use the condensed milk can to measure)
- 3 eggs
Caramel
- 1 cup sugar
- 1 tsp vinegar
- 1/2 cup water
For the pressure cooker
- 1 cup water
Instructions
1️⃣ Make the caramel
- Add sugar, water and vinegar to a small saucepan.
- Heat on medium until it melts and becomes golden caramel.
- Carefully add more water (optional) and stir until smooth.
- Pour the caramel into a flan mold or small baking pan that fits inside the pressure cooker.
2️⃣ Prepare the flan
- In a blender combine:
- condensed milk
- milk
- eggs
- Blend for 20–30 seconds until smooth.
- Pour the mixture into the caramelized mold.
- Cover tightly with aluminum foil.
3️⃣ Cook in the pressure cooker
- Add 1 cup of water to the pressure cooker.
- Place a trivet at the bottom.
- Put the mold inside the cooker.
- Close the lid and bring to pressure.
⏱ Cook 12–15 minutes after pressure starts.
- Turn off heat and allow pressure to release naturally.
4️⃣ Chill and serve
- Let the flan cool completely.
- Refrigerate for 3–4 hours.
- Run a knife around the edges and flip onto a plate.
✅ Serves: 8
