Flan 1-2-3 in the Pressure Cooker

Made with Nestlé La Lechera Sweetened Condensed Milk

The 1-2-3 flan is a classic Brazilian dessert because the ratio is easy to remember:

  • 1 can condensed milk
  • 2 cans milk
  • 3 eggs

Ingredients

Flan

  • 1 can (375 g) sweetened condensed milk
  • 2 cans whole milk (use the condensed milk can to measure)
  • 3 eggs

Caramel

  • 1 cup sugar
  • 1 tsp vinegar
  • 1/2 cup water

For the pressure cooker

  • 1 cup water

Instructions

1️⃣ Make the caramel

  1. Add sugar, water and vinegar to a small saucepan.
  2. Heat on medium until it melts and becomes golden caramel.
  3. Carefully add more water (optional) and stir until smooth.
  4. Pour the caramel into a flan mold or small baking pan that fits inside the pressure cooker.

2️⃣ Prepare the flan

  1. In a blender combine:
    • condensed milk
    • milk
    • eggs
  2. Blend for 20–30 seconds until smooth.
  3. Pour the mixture into the caramelized mold.
  4. Cover tightly with aluminum foil.

3️⃣ Cook in the pressure cooker

  1. Add 1 cup of water to the pressure cooker.
  2. Place a trivet at the bottom.
  3. Put the mold inside the cooker.
  4. Close the lid and bring to pressure.

⏱ Cook 12–15 minutes after pressure starts.

  1. Turn off heat and allow pressure to release naturally.

4️⃣ Chill and serve

  1. Let the flan cool completely.
  2. Refrigerate for 3–4 hours.
  3. Run a knife around the edges and flip onto a plate.

Serves: 8
Total time: ~30 minutes + chilling
